Papaya or pineapple enzyme tenderized duck or other tough meats

 1. clean duck, boil for 10 minutes in plain water

2. remove duck in hot water, wash

3. Marinate in brine with crushed pineapple or grated papaya for 1 hour. 

cook as preferred. If for frying, dry duck. 


Try on other tough meats
