allow duck to fry in rendered oil till skin is brown
4 slices of bread, wet with water and squeeze out water
in pan, crack 3 eggs, separate yolk, add the bread to the remaining egg whites
add diced capsicum, chopped coriander, sliced onions, spice of choice
mix and make several round pieces
put in skillet, add in yolk at center of each piece,
fry in low heat, cover. Turn after a few minutes until cooked.
