Duck confit

 adobong puting itik

follow Simpol style

to clean duck,

boil in water for 10 minutes.

Throw away water, boil again with ginger, when fat is rendering from duck

add vinegar, garlic, patis, peppercorn, laurel leaf

cook till water evaporates

allow duck to fry in rendered oil till skin is brown
